Simple and Clean Rice Bowl

Once in a while I get tired of eating salads for lunch.  I love making rice bowls for dinner.  So, to mix it up, I will prep a shrimp rice bowl for my lunches.  This is another recipe off my meal plan created for me by Tara Frazier.  It is delicious and you can sub out your protein and add a variety of veggies and toppings.  To make this a meal prep just make a few double batches and there you go!  I have a four day work week so I will be quadrupling this recipe.

 

Simple and Clean Bowl:

3 oz of cooked shrimp (you can use chicken here if you would like)

60 grams of cooked asparagus (the sky is the limit here..you can sub for bell pepper, green beans, green peas whatever you would like)

90 grams of rice (I am using jasmine rice but you could use brown rice)

9 grams of nuts (I will use cashews but you could use any nut you would like or add some cheese as your fat for this recipe)

Start out by layering in the rice, then layer the asparagus, then top with the shrimp and add the nuts.  Enjoy!!
