Low Carb Cheeseburger Salad

I had a variation of this salad a few months ago at a work luncheon.  The rep ordered several different salads from Tasty as Fit.  If you are local to the Columbia, South Carolina area I highly recommend ordering from her!  Her salad was made with a black bean burger.  I decided to try a different version using ground turkey.  It is just easier for me to sub this in when I am tracking macros.  If you are vegan or vegetarian you can absolutely us a black bean burger or beyond meat burger.  This salad is an easy meal prep you can make on Sunday and have lunches for the week.  You can also add a variety of toppings each day so you don’t get bored!

 

What you will need:

1 pound of lean ground turkey (you can also use beef if you like)

Lettuce (I like to mix butter lettuce with romaine)

Grape tomatoes

Reduced fat shredded cheese (I usually get the Mexican blend)

Kosher Mini dill pickles

Bolthouse Ranch dressing

To prepare:

Make 3 ounce patties and either grill or sauté these until no longer pink.  You can season with salt, pepper, or my favorite Hidden Valley Powdered Ranch Seasoning.

Place these in a Tupperware container for meal prep the next day.

In a glass Tupperware bowl, layer a mixture of the lettuce.  Then add bite size pieces of the turkey burger.  Top with tomatoes (I use about 3 to 5 here) and sliced dill pickles (I use about 2).  Top with 14 grams of the reduced fat cheese and 30 ml of the Bolthouse dressing.

Some other toppings you can use:  diced red onion, avocado, sliced boiled egg, crispy bacon and sliced bell peppers.  I have also seen people make a “burger salad dressing” with reduced sugar ketchup, mustard, dill pickle relish and fresh dill!  Enjoy!
