Lean and Healthy Chili

Here is another family favorite that I love to make on Sunday afternoon!  This one batch makes enough for dinner and lunches the next day.  Or you can freeze it for a later date.

What you need:

1 pound of 99% lean beef or turkey (if you are using lean beef be sure to use fat free cheese and sour cream to make a healthier version)

1 small onion diced

1 tablespoon of minced garlic

1 28 oz can of crushed tomatoes

1 14 oz can of diced tomatoes with green peppers and onions

1 8 oz can of tomato sauce (optional)

1 15 oz can of mixed chili beans (black and pinto)

1 15 oz can of black beans (you can also use dark red kidney beans)

1 15 oz can of Chili Magic beans

1 packet of McCormick Chili Seasoning

Olive oil

Salt and Pepper to taste

Heat a pot over medium heat and add a small amount of olive oil.  Add diced onion and sauté for 2 minutes.  Then add mince garlic and cook until onion is soft.  Add the meat and ½ of the seasoning packet.  Cook until meat is no longer pink.

Add the cans of diced tomatoes and simmer for 15 minutes.  Drain the cans of beans and add to the pot along with the other ½ of the packet of seasoning and salt and pepper to taste.  Simmer for 15 minutes.

Add the can of tomato sauce.  This will give the chili a nice red color and adds a ton of flavor.  Simmer for 30 minutes.

Some of our favorite toppings are shredded cheese, sour cream, green onions, jalapenos and avocado.  Enjoy!
