BBQ Chicken Nachos

These nachos are a family favorite!  I love to make these on Sundays when we are hanging out and watching football.  The nice thing about these nachos…they are healthy!  You can sub in any protein you would like but to keep them on the healthier side I make these with chicken.  You can double and triple these if you are making them for a crowd.  These will defiantly be on the menu in a few weeks for Super Bowl Sunday!

 

What you will need:

2-4 chicken breasts

G Hughes Barbeque Sauce (this is a sugar free sauce and is very tasty)

Fat Free Shredded Cheese

Part Skim Shredded Mozzarella Cheese

Guacamole

Light Sour Cream

Green Onions

Quest Nacho Tortilla Chips

Regular Tortilla Chips

 

Place chicken breasts in the crockpot.  Add 1 cup of water and about 1 cup of BBQ sauce. Cover and cook on high for 4 hours or low for 8 hours.

Pre heat oven to 350.  On a cookie sheet, spread 1-2 bags of the Quest Nachos and about ½ a bag of regular tortillas evenly.  Once the chicken is done shred with a fork.  Spread the chicken over the nachos and tortillas.  Add the cheeses on top (I usually just eyeball this).  Place in the oven for a few minutes until the cheese is melted.  Now you are ready to plate up your nachos!

I usually have a few bowls out with the guacamole, sour cream, and onions so people can garnish how they like.  You can also have tomatoes, salsa and jalapenos.  Enjoy! (This is a version of nachos from my meal plan created by Tara Frazier).
