Baked Chicken Fajitas

This recipe is a staple in my household.  I have been making variations of these chicken fajitas for over 8 years now.  The wonderful thing about this meal is it’s easy to prepare, it’s delicious and easy clean up!  You can sub out the tortillas for rice (which I do often), serve over chips, add sour cream, cheese, salsa or guacamole.  You can also swap out the chicken for shrimp or steak.

 

What you will need:

1 pack of chicken tenderloins

2 bell peppers

1 sweet onion

Your favorite seasoning (I use the McCormick Fajita seasoning or the Street Taco Southwest Ranch Chicken)

Any additional toppings listed above

Preheat the oven to 400 degrees

Cut the bell pepper and onions into strips

Place the chicken, peppers and onions in a baking dish (I use a 9×11)

Drizzle with a little avocado oil and about half a packet of seasoning.  Stir to combine until chicken and veggies are coated

Bake for about 25 to 30 minutes until chicken is cooked

Serve over rice, make a tortillas or eat by itself (low carb option) Add toppings and enjoy!!
